Raw, Green, Vanilla, and Pumpkin Seed Power Bars

Ingredients:

1 cup of raw unsalted nuts (I used almonds and walnuts

2 tbsp chia seeds

1/2 cup pitted dates

1/4 cup craisins (or raisins or any other dried fruit)

2 handfuls of baby spinach

1 tsp vanilla essence

1 pinch of salt

A splash of coconut water (if not sticky enough)

1 tsp honey (optional)

1/2 cup pumpkin seeds (or any other seed)

First, blend the raw nuts in a food processor for about 15 seconds or so.

Then add the dates, dried fruits, baby spinach, vanilla essence, chia seeds, and salt and blend until a thick green paste.

Add a splash of coconut water if the paste is not sticky enough.

Place the paste in the center of a piece of wax paper and fold the edges over it, forming it into a square.

Unfold the paper and press the pumpkin seeds into the top.

Refold the paper and place in the fridge for about 2 hours (or in the freezer for 20 as long as you move it into the fridge after. )

Then, cut and enjoy! You honestly cannot taste the spinach, and they are filling, delicious, and nutritious!
